Concerning the roll-back issue, that is unfortunately true for all games. Galaxy allows a roll-back to older versions. But GOG doesn't provide older offline installers as a rule, when they get updated. You might get lucky with contacting support. Sometimes they have provided older offline installers upon request. But don't count on it in all cases. They should, in cases where an update breaks something. But support is sometimes very slow.
But if I were to add 'no roll back for offline installers' as warning to the list, all games on GOG would be on the list. So I think it's not that beneficial to add it.
